    There is no single Greek cuisine but a patchwork of regional and island cuisines shaped by local geography, isolation, and history of occupation or trade. Dishes that appear 'Greek' abroad are often a flattened urban subset, while village kitchens preserve distinct ingredients, techniques, and names that shift valley to valley and island to island.

  2. Recipes documented through village cook interviews

    The method is to collect recipes directly from home cooks in their own villages and record the ritual, seasonal, and religious context alongside the technique. Because this knowledge passes orally and is disappearing with each generation, field documentation keeps both the dish and the reason it is made, such as fasting periods, feast days, and harvests.
