Couscous as layered steaming technique
Proper couscous is rolled from semolina and moistened, then steamed several times over a simmering stew in a couscoussier, and it is worked by hand between steamings to separate and swell the grains. The repeated steam-and-aerate cycle, not boiling, gives the light, distinct texture, and the stew below flavors the grain through its vapor.
